Rice is naturally gluten-free, so most rice dishes will be safe for coeliacs. However, soy sauces do often contain gluten, so make sure you're not serving anything that's been marinated or dipped in soy sauce. You can get gluten-free sauces, though, so no one has to miss out on flavour or eat dry sushi platters.
If rice isn't your thing, pure soba noodles are gluten-free as they are made from buckwheat. Other noodles, including udon, do contain gluten.
Very little Japanese cuisine contains dairy, so luckily dairy-free guests are easy ones to cater for. One occasion to watch out for here, is cream cheese in sushi rolls. While traditional Japanese restaurants likely won't have this menu item, many sushi restaurants to.
Vegans and vegetarians certainly won't be going hungry! Tofu and other soy products are very common on Japanese menus and are often used to replace animal products on sushi platters, in soups and other dishes. If you're an eggplant fan, miso eggplant is also a great alternative to meat in Japanese dishes like donburi.
